Chapter 7 Highland 8 years old comes from a barrel from one of the oldest Scottish distilleries based on the Isle of Mull, famous in the world for its peated whiskeys. The production and malting methods have remained artisanal in order to offer authentic whiskeys, rich in character.

This 8-year-old highly peated single malt (42 PPM) distilled in November 2014, was aged in Bourbon hogshead barrels, finished for six months in rum barrels and then bottled in November 2023 at 50.2%.

It offers 312 bottles, not one more. Bottled raw in barrel, this single malt is not cold filtered and no coloring has been added.

Notes

◊ Nose: Powerful and elegant. The first nose reveals a lively combination between peat and slightly iodized smoky notes. A refined marriage that evolves towards spicy flavors. When aerated, notes of cut hay mingle with aromas of exotic fruits (mango, papaya), pear, green apple, as well as licorice, before fading away to give way to voluptuous peat.
◊ Palate: Rich and delicious. The attack on the palate is explosive, dominated by peat accompanied by citrus fruits, heather honey and iodine notes. The mid-palate gains in creaminess with a sweet wave of exotic fruits (pineapple, passion fruit), spices, agaves and white flowers. The finish is marked by smoke, notes of blond tobacco and fresh vanilla.
◊ Finish: Silky. The finish is guided by malty, finely iodized flavors, which are expressed with character in this peaty palette. Magnified by caramelized, vanilla and spicy notes (nutmeg, white pepper), peat softens to give way to candied fruits (orange peel, apricot) and caramelized mango flavors. The retro-olfaction offers a bouquet rich in peat, smoked (Havana).

Its name refers to the idea of telling a story through each barrel, each “chapter” being a unique and limited edition. Chapter 7 goes through the cellars of recognized distilleries to identify barrels with exceptional aromatic potential, then elevates, blends or refines them with precision until reaching the desired balance. Their artisanal and confidential approach favors quality over volume: each release is numbered, often from a single barrel, and bottled without any tricks, to reveal the authentic character of the selected spirit.
