Notes

◊ Nose: Intense, harmonious. The first notes reveal a mixture of citrus fruits (blood orange, grapefruit), evolving rapidly towards aromas of apricot and pepper. As it aerates, the nose is enriched with caramelized, chocolate and spicy nuances. Subtle touches of saffron and clove add remarkable depth to this exceptional nose.
◊ Palate: Lively, unctuous. The first taste reveals rich flavors of vanilla, citrus and gingerbread. Notes of licorice then emerge, followed by exotic fruits (plantain, lychee, mangosteen). The mouth concludes with notes of cocoa powder, candied apricots and a hint of black olive.
◊ Finish: Long, delicious. The finish reveals aromas of old Sauternes wines, rich in candied fruits (apricot, peach, orange). Lavender blends with notes of ripe banana, quince and rhubarb. The finish reveals vanilla, creamy (coconut, almond) and pastry flavors (rum baba, cannelé). Retro-olfaction leaves smoky, woody notes in the mouth, accompanied by praline sweetness.

Unlike a traditional distillery, Chapter 7 is an independent bottler founded in Scotland and specialising in the selection of rare and expressive whiskey and rum casks. Its name refers to the idea of telling a story through each barrel, each “chapter” being a unique and limited edition. Chapter 7 goes through the cellars of recognized distilleries to identify barrels with exceptional aromatic potential, then elevates, blends or refines them with precision until reaching the desired balance. Their artisanal and confidential approach favors quality over volume: each release is numbered, often from a single barrel, and bottled without any tricks, to reveal the authentic character of the selected spirit.
