At Château de Hartes, the harvest from these plots is always harvested later due to the dominant grape varieties (Cabernet Franc and Cabernet Sauvignon).
Controlling phenolic maturity (tannins/anthocyanins) makes it possible to harvest ripe and healthy grapes. The meticulous and careful vinification gives this red wine: depth, flexibility and length in the mouth. The floral nose of the Cabernet grape predominates in its youth and later evolves into the more complex aromas of a Grand Vin de Bordeaux.
